Summer Grill Marinade

If I could, I would grill every day in the summer. And this is my favorite marinade. It’s sweet and tangy, not quite teriyaki, but totally delicious on almost every type of meat, poultry or seafood. You can mix up a big batch of this marinade and have it last for several meals, or if you’re making a giant batch of kebabs (pictured here) you might need the whole amount.

Ingredients

  • Marinade:
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 2 cups soy sauce
  • ¾ cup sugar
  • ¾ cup brown sugar
  • ¼ cup sesame seeds, toasted
  • ¼ cup sesame oil
  • ¼ cup onion dried, minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 tablespoon cornstarch, dissolved in ¼ cup of water

Preparation

  • 1Lightly sauté minced garlic and ginger in a frying pan until it’s fragrant yet not soft.
  • 2Heat all ingredients (except cornstarch and water) on low for 10-15 minutes, until the sugar is dissolved.
  • 3In the last 5 minutes, dissolve 1 Tbsp cornstarch in ¼ cup water and add to soy sauce mixture to thicken.
  • 4Allow to cool and transfer to a bottle. Refrigerate overnight before using as a marinade.
